(makes 8)
1/4 cup chopped jarred roasted red peppers
1 rib celery
1 shallot
2 T. EVOO
2 T. red wine vinegar
1 T. capers, rinsed*
Kosher* salt and freshly* ground pepper
8 slices soppressata
8 slices mortadella
8 slices provolone cheese
8 slider buns
In a food processor, chop first 6 ingredients to form a coarse paste; season with S&P. Divide meats, cheese, and pepper spread among buns. Voila!!
