Chipotle Pepper Jack Cheese Sauce

This is DELISH poured over eggs:
(makes 2&3/4 cups)

1/4 cup butter
2 T. chopped chipotle peppers in adobo sauce
1/8 t. freshly* ground pepper
1/4 cup all purpose flour
2&1/2 cups 2%* milk
1&1/2 cups Pepper Jack* cheese, shredded

Melt butter in a saucepan over med. heat. Add chipotle peppers, flour, and pepper; cook and stir until blended. Gradually add milk. Bring to a boil; cook until thickened. Reduce heat; stir in cheese, and cook until melted. YUMOLA!!!!
