Grilled Caprese Quesadillas

Use your homegrown or the Farmers' Market bounty in this melty summer sizzler!
(serves 2)

6 oz. fresh ("wet") mozzarella cheese, sliced
2 med. Campari* tomatoes, sliced and patted dry
4 flour* or whole wheat tortillas (8")
1/3 cup julienned fresh basil
1/4 cup pitted Greek Kalamata olives, chopped
Freshly ground pepper, to taste
Kosher salt*, to taste

Layer cheese and tomatoes on half of each tortilla; sprinkle with basil, olives, S&P. Fold to close. Grill, covered, over med.-high heat, 2-3 min per side.
