Tarragon-Chicken Salad with Cranberries

Another one from "Cooking with Herbs"!! And, I just picked up a new tarragon plant to join my farm yesterday - not only will I use it in this recipe, but will add it to hollandaise to make bernaise sauce.
(serves 4)

1/2 cup chopped fresh tarragon leaves*
1/4 cup chopped red onion
1 cloves garlic, minced
1/3 cup mayonnaise
1 T. white wine vinegar
1/4 t. kosher salt
1/4 cup chopped cooked chicken
1/2 cup dried cranberries
1/4 cup chopped toasted almonds, pecans*, or walnuts (optional)
Toasted bread, ciabatta buns, or torn mixed salad greens

In a med. bowl, stir together the 1st 6 ingredients (through salt). Stir in the chicken, cranberries, and nuts - if using; toss to coat. Serve open face on bread, buns, or over greens.
