Herbed Egg and Smoked Salmon Wrap

In this yummy breakfast suggestion, the eggs are the wrap!!
(serves 1)

2 large eggs
1 T. finely chopped chives
1 T. finely chopped flat-leaf* parsley
1 t. coconut oil
2 t. mayonnaise
2 oz. smoked wild caught* salmon
Fresh dill frond*

Whisk together the eggs, chives, and parsley. Heat the coconut oil over med. heat in a small skillet (6-8"). When the oil is melted and hot, pour in the egg mixture. Cook, undisturbed until set around the edges and easy to flip, about 2-3 min. Flip and cook for 1 min. more. Transfer to a plate. Spread the mayo. over the top and place the smoked salmon in the middle third of the eggs. Top with the dill frond, and roll up to create an egg wrap. Serve immediately with rye* toast, and fresh fruit*.
