Chickpea Curry Salad Sandwiches

Happy Mother's Day!!!! This sammie has a little sweet and lots of sparkle - just right for celebrating Mom.
(serves 4)

6 T. mayonnaise
1 T. curry powder
1&1/2 t. fresh lemon juice
Kosher* salt and freshly* ground pepper
2 can chickpeas, drained and rinsed
1 oz. chopped pecans
3 T. chopped golden* raisins
1 diced celery stalk
1 diced green onion
4 sliced whole-grain bread, toasted*
Butter* lettuce leaves
Spouts
Thinly sliced red onion

In a small bowl, whisk together mayo., curry powder, lemon juice, and S&P, to taste. Place the chickpeas in a food processor; pulse to roughly chop. In a large bowl, combine chopped chickpeas, and 3 T. of the mayo. mixture. Fold in pecans, raisins, celery, and green onion. Season with salt, to taste. Serve on toast topped with lettuce, sprouts, and onion.
