I saw this one in my new "Cooking with Herbs" mag. - which is a wonderful read, obtw.
(makes 24 halves)
12 hard-cooked eggs
1/3 cup mayonnaise
2 oz. cream cheese, room temp.
2 t. yellow or Dijon mustard
Kosher* salt*, and freshly ground white* pepper*, to taste
1/3 cup chopped fresh chives, plus more for topping
3 oz. smoked salmon, finely chopped
Paprika
Peel eggs and cut them in half lengthwise. Remove yolks and place in a med. size bowl. Place whites, cut sides up, on a large platter. Beat yolks, mayo., cream cheese, mustard, and S&P with a mixer on med. until smooth. Stir in chives and salmon. Stuff egg white halves with yolk mixture. Sprinkle on paprika, and extra chives for serving.
