If you are sensitive to spice, substitute mini sweet peppers in place of the jalapeno for a milder treat!
(serves 6)
1/2 cup (2 oz.) herb goat cheese
1 slice cooked uncured* smoked* bacon, crumbled
2 t. minced scallions
6 jalapenos (or mini peppers), halved and seeded (wear gloves*)
1 T. shredded sharp* cheddar cheese
Heat grill or broiler*. In a bowl, combine 1st 3 ingredients. Divide goat cheese mixture evenly among pepper halves. Arrange on greased heavy-duty foil (on a baking sheet if using the broiler*); sprinkle with cheddar. Place on the grill or under the broiler. Cover (if grilling); cook 3 min. or until the cheese melts.
