Grilled Chicken with Cucumber-Radish Salsa

You can get your nosh on in just 20 min. with this bright fresh dinner!! Not into cucs? Mango would make a nice substitute.
(serves 4)

2 T. EVOO, divided
1/2 t. ground coriander
1/2 t. kosher* salt, divided
1/2 t. freshly* ground pepper, divided
4 thin-cut boneless, skinless chicken breasts or cutlets (4 oz. each), trimmed
1/2 cup finely chopped English or Persian* cucumber
1/2 cup finely diced radishes
1/4 cup finely chopped fresh lemon* mint
2 t. rice vinegar

Preheat grill to med.-high or turn on broiler. Combine 1 T. oil, coriander, and 1/4 t. each S&P in a small bowl. Brush on both sides of chicken. Grill or broil the chicken, turning once, until an instant-read thermometer inserted in the thickest part registers 165, 8-10 min. Meanwhile, combine the rest of the ingredients in a med. bowl with the remaining 1 T. oil and 1/4 t. each S&P. Serve with the chicken.
