I also Love cauliflower!! Here's a quick one:
A small head of cauliflower (flowerettes only) chopped fine
Green olives (as many as you like - I would put LOTS in), also chopped fine
3/4 of a cup (or more) grated sharp cheddar
Chopped green onions (green parts only)
3 slices of crisp bacon - crumbled
Dried dill
Hellman's mayo (lite is OK) 2/3 part to Ranch dressing 1/3 part
Mix all ingredients and chill. Yumola!!
