Los Cabos Pico de Gallo

You can be an armchair traveler when you dive into this traditional and mouthwatering chunky farm-fresh salsa. There is a bit of chop chop chopping to do, but you will be rewarded. Just think about swaying palm trees!!
(makes 2&1/2 cups)

2 med. Campari* tomatoes, seeded, and diced
1/3 large sweet* onion, diced
1/4 cup chopped fresh cilantro
1 scallions, minced
1-2 Serrano peppers, or jalapenos, seeded, membrane removed*, and minced (wear gloves*)
2 cloves garlic, minced
1 T. fresh* lime juice
3/4 t. EVOO
1/2 t. ground cumin
Kosher* salt and freshly* ground pepper, to taste

In a bowl, combine all ingredients. Cover, and refrigerate at least 30 min. Serve with tortilla chips or spread on tacos.
