Here's an "eye opener" for ya!
(serves 8)
1 tube (13.8) oz. refrigerated pizza crust
2 T. EVOO, divided
6 large eggs
2 T. water
1 pkg. (3 oz.) real bacon bits, or bake your own using uncured smoked bacon*
1 cup shredded Monterey Jack cheese
1 cup shredded sharp* cheddar cheese
Preheat the oven to 400. Unroll and press dough onto bottom and 1/2" up sides of a greased 15x10x1" pan. Prick thoroughly with a fork; brush with 1 T. oil. Bake until lightly browned, 7-8 min. Meanwhile, whisk together eggs and water. In a nonstick skillet, heat remaining oil over med. heat. Add eggs, and cook and stir just until thickened and no liquid egg remains. Spoon eggs over crust. Sprinkle with bacon bits and cheese. Bake breakfast pizza until cheese is melted, 5-7 min.
