Total prep and cooking time = 15 minutes!!
(serves 2 as a dinner, or 4 as an appetizer)

3 rustic white Flatout Artisan Thin Pizza Crust (the package includes 6)
1/2 lb. shrimp, cooked and peeled, tails removed*
1/2 cup grated Parmesan cheese
1 cup low-fat crumbled feat cheese, more or less to your liking
1/2 cup sun-dried tomato bits
1 shallot, thinly sliced
1/2 red* bell pepper, chopped
1 cup grape tomatoes, halved
1 t. dried oregano
crushed red pepper flakes (optional)
2 T. chopped flat leaf parsley
Heat oven to 375. Place flatbreads on a rimmed* parchment lined baking sheet. Lightly brush with olive oil. Place in the oven for 2 min. or so. Remove from oven briefly (but keep oven on). Top the warmed flatbreads with the next 7 ingredients. Sprinkle with oregano and crushed red pepper flakes. Place back in the oven for approximately 3-4 min. Remove and garnish with parsley. Slice and enjoy!!
