This takes lasagna and gives it a Mexican twist. You can easily double this for your Seahawks game watching gang!!
(serves 4)
1/2 lb. Mexican chorizo*, lean ground beef, turkey*, or chicken*
1/2 cup chopped sweet* onion
2 garlic cloves, minced
1 t. chili powder
1/2 t. ground cumin
1 can (14&1/2 oz.) Mexican diced tomatoes, drained
3/4 cup reduced-fat ricotta cheese or small curd* cottage cheese*
1/4 cup shredded part-skim mozzarella cheese
3 T. minced cilantro, divided
4 whole wheat, corn*, or flour* tortillas (8")
Coconut* oil cooking spray
1/2 cup shredded Mexican 4 cheese blend*
Preheat oven to 400. In a skillet, cook and crumble meat with onion and garlic over med. heat until no longer pink, 4-6 min. Stir in spices and tomatoes. Bring to a boil; remove from heat. In a bowl, mix ricotta, mozzarella, and 2 T. cilantro. Place one tortilla in a 9" round baking pan coated with cooking spray. Layer with half of the meat sauce, one tortilla, the ricotta mixture, another tortilla, and the remaining meat sauce. Top with remaining tortilla; sprinkle with cheddar, and remaining cilantro. Bake, covered, until heated through, 15-20 min. Let sit for 10-15 min. before slicing.
