Mexican Meatloaf in the Crock Pot

I found this one in an old Crock Pot Cookbook. Easy Peasy - tastes like tacos in a loaf:

2 lbs. ground beef (or chicken* or turkey*)
1 cup coarsely crushed white* corn tortilla chips
1/2 cup Taco Bell* Hot Sauce
2 T. low sodium* taco seasoning (I like Trader Joe's*)
1 egg, lightly beaten
1/2 cup grated Monterey Jack or Pepper Jack* cheese
3 green onions*, chopped (green parts only)

Mix all ingredients together. Shape into a loaf. Place in Crock Pot. Cover and cook on low 8-10 hours or high: 3&1/2-5 hrs.
