Citrusy Shrimp-Stuffed Avocados

So much yumminess in this one!!
(serves 4)

1 small shallot, finely chopped
1/4 cup light* mayo.
3 T. sour cream
3 T. freshly squeezed* lime juice
2 T. orange juice
3/4 t. kosher* salt
1 lb. cooked shelled shrimp, tails off*, chopped
1 cup grape tomatoes, halved
1 Serrano chile, thinly sliced (optional*)
2 ripe avocados, halved, pits removed
Fresh* cilantro, for garnish
Sweet potato chips, for serving

In a small bowl, whisk shallot, mayo., sour cream, lime juice, orange juice, and salt. In a large bowl, toss shrimp, tomatoes, chile, and half of the dressing. Refrigerate 20 mins. to 2 hours. To serve, spoon into avocado halves and drizzle with remaining dressing. Garnish with cilantro, and serve with sweet potato chips.
