Brats and Spuds in a Slow Cooker

Again, another Autumnal recipe offering:
(serves 6)

5-6 bratwurst links, cut into 1" pieces
5 med. sized potatoes (I would use Yukon gold* or baby reds*), peeled and cubed
27 oz. chilled* sauerkraut
1 med. tart apple (I like Granny Smith*), chopped
1 small sweet* onion, chopped
1/4 cup packed brown sugar
1/2 t. coarse* kosher* salt
Crisp uncured*  bacon pieces, just before serving
Caraway seeds, just before serving

Brown bratwurst on all sides in a cast iron* skillet. Combine remaining ingredients in a slow cooker. Stir in bratwurst and pan drippings. Cover cook on high 4-6 hours or until the potatoes and apples are tender. Top with bacon and caraway, if using.
